Grilled Rosemary Chicken Thighs with Sweet and Sour Orange Dipping Sauce

Serves 4-6

1TBL plus 1tsp minced fresh rosemary
2tsp brown sugar
2tsp kosher salt
1tsp freshly ground pepper
1tsp crushed red pepper flakes
2TBL vegetable oil
2 1/2 boneless, skinless chicken thighs
1C orange marmalade
1/4C rice vinegar

In a small bowl, mix the 1TBL rosemary with the brown sugar, salt, pepper, and red pepper flakes. In a swallow pan, drizzle the oil over the chicken and toss to coat. Sprinkle the chicken evenly with the rosemary mixture.

Warm the marmalade, vinegar and remaining rosemary in a small saucepan over low heat until just warm: set aside in a warm spot.

Prepare BBQ and BBQ chicken until well marked and cooked through.

Move thighs to a platter and let rest 4-5 minutes. Serve hot, warm or at room temp. with individual bowls of warm dipping sauce.

I served this chicken when I had company and got rave reviews. Is spicy with the red pepper flakes. If you do not want it spicy, simply omit the red pepper. Also fun to serve the chicken on skewers!

Zucchini Saute

This is a great easy saute and tastes great with garden fresh vegetables!

2 medium zucchini
1 medium red and green bell pepper
2-3 TBL vegetable oil
2 C. fresh or frozen corn
1 tsp garlic salt
1/2 tsp Italian seasoning

Cut all vegetables
Heat olive Oil in skillet
Add vegetables and seasonings
Saute
Enjoy!

Homemade Tortillas

These are worth the extra time it takes to make them!

3-4 cups flour
sea salt
1/3 cup oil
1 cup warm water

Mix 3 cups flour and salt well. Stir in the oil and water.
Turn onto floured surface and knead until smooth and silky, adding flour as necessary.

Separate dough into balls (about 20-30) and let rest under towel. Flatten into tortillas. If you are fortunate enough to have a tortilla maker, great! If you're like me, I just use a rolling pin. Use extra flour in between tortillas to prevent sticking!!

Place on hot, dry skillet for about 1 minute, flip, then another 30 seconds or so. Repeat 20-30 times. :) Done!

Chocolate Chip Cookies!

1 c Butter
1 1/4 c white sugar
1 1/4 c brown sugar
1 tbl vanilla
2 eggs
3 c flour
1/2 tsp baking soda
1/4 tsp salt

Preheat to 350* Bake 15-18 min

Combine all ingredients above! Mix in a bag of semisweet chips! And bake!
Makes ALOT of cookies!
